Oven Roasted Asparagus w/peppers


  • 1 lb asparagus – snap off woody ends (about the last 2 inches) & discard
  • 1 red pepper
  • 1 yellow pepper
  • 2 tsps olive oil


  • Preheat oven to 425°F
  • Cut asparagus into 2 to 3 inch long pieces
  • Cut peppers into 1 inch X 1 inch pieces
  • Combine cut asparagus & peppers into bowl, add olive oil, and toss to coat
  • Oven roast for about 20 minutes, turning occasionally
