The best ways to prepare vegetables are roasted, steamed, or stir-fried in a little oil. Serve more raw vegetables like sliced peppers, tomatoes, and carrots. Boiling and over steaming vegetables causes them to lose much of their nutrients. Try to minimize the amount of oil used to cook veggies – I use oil sprays most of the time.
Avoid adding butter to vegetables – just adds more fat & calories. Experiment with oil-less vinaigrettes and different sauces.
